Airline Cut Breast

Airline Cut Breast is a specialized variation of the BL Breast with skin often used by higher end restaurants. Like a BL Breast with skin, the Breast portion of the chicken is deboned while leaving the skin attached. Instead of removing the whole wing, as you would with BL Breast with skin, the wing is cut at the midjoint, leaving the Drummette attached. Like the BL Breast with skin, Airline Cut is available in different sizes.
